Huib Bakker (born in 1965) is a renowned expert regarding the molecular properties of water and ice. Bakker developed an innovative infrared spectroscopy technique that makes it possible to detect the movement and interaction of individual water molecules. This led to new findings about the behaviour of water molecules that have had implications for the food industry, energy technology and water treatment.
